Gladys is the founder of Sambuxa NYC and the only Sudanese caterer in NYC. She is known for her hand-made samosas and a host of incredible Sudanese dishes!

Sambuxa Ingredients and Directions:

Dakwa Salad

Ingredients: 1 bunch scallions, 2 tomatoes, 3 tbsp of feta cheese (optional), 1 tbsp peanut butter, 2 tbsp lime juice, 2 tbsp water, 1 tbsp sesame oil

Directions: finely dice scallions, finely dice tomatoes. dressing: mix in a bowl, peanut butter with lime juice, water, sudanese spice blend (or cumin, salt & pepper) and sesame oil.

Fava bean stew

Ingredients: 2 tomatoes, 1 onion, 2 cloves of garlic, 2 tbsp lime juice, 3tbs of feta cheese, 1 can of fava beans or (2 cups of dry fava beans, soak overnight and cook fully following day) 1 tbsp sesame oilprep: chop onions in crescent form, chop tomatoes in crescent form, also cube 1/2 a tomato finely,  finely mince garlic. 

Directions: in a pot add oil and bring to a heat, add onions until translucent. Add tomatoes and stew onions and tomatoes. Add garlic. Add can of fava beans and squash beans into stew with a glass cup or potato masher. Add spice blend and lime juice and let simmer. Stew is ready when beans have been warmed. Serve beans with feta cheese, sesame oil and a few fresh cubed tomatoes. 

Ta3miya (Falafel): 

Ingredients: 2 cups of chickpeas (soaked overnight), 2 strands scallions, 1/2 onion, 2 cloves of garlic, 1 cup of fresh cilantro, 1 tsp of baking soda, 1 tbs of our spice blend, 2 tbsp of sesame seeds, 1/2 cup of water.

Directions: blend chickpeas finely with a little water ( we want a coarse texture not hummus), add scallions, onions, garlic and blend well. Add fresh cilantro. In a bowl add all blended ingredients, the spice blend and the baking soda and mix well by hand or with a spoon. Finally add the sesame seeds. Prepare a frying pan with hot oil for frying (alternatively form the Ta3miya (Falafel) and bake in a preheated oven on an oily pan). 
Tip: You can freeze the Ta3miya mixture if you make too much.
